Sun Dried Fruits

Top quality tomatoes, pineapple and papaya are washed and prepared and then set to dry naturally in the sun.

This process is not sufficient, on its own, to achieve a satisfactory product. (The level of humidity in our tropical climate is too high. In addition, sun drying is a weather dependent operation). Drying is therefore completed in our specially designed wood-fired ovens.

Temperature and humidity are carefully monitored during the drying process. When the drying is complete, the products are packaged immediately and then stored under refrigeration before distribution. No preservatives, antioxidants, colouring, flavour enhancers, or any other type of additives are used at any stage.

The shelf life is minimum six months.


Sun Dried Tomatoes in Basil & Olive Oil Marinade

Our marinade is made from a blend of soya bean oil and olive oil, together with salt, spices and our own home-grown basil.


Peanut Butter & Tahini

Best quality peanuts from the eastern region of Sri Lanka are first shelled then oven-roasted, special care being taken to maintain the temperature at 160C for a minimum of 45 minutes. (This heat treatment removes any danger of aflatoxin contamination.) The peanuts are then hulled and inspected carefully, any damaged or discoloured kernels being removed at this stage.

The peanuts are ground and the butter is manufactured immediately after the nuts have been roasted and hulled. This minimises the chance of rehydration. The nuts are ground and blended with salt, soya bean oil, vegetable oil and natural palm sugar.

Premium grade white sesame seed, imported from India, is used for the manufacture of our Tahini. The seed is meticulously inspected and any extraneous material is removed.

The sesame is very lightly roasted to reduce moisture level and release the flavour. It is then ground to the correct consistency with a blend of sesame oil & soya bean oil.
